Ingredients

Meat
  • 2 lbs (1 1/2-inch thick) beef shanks, thick
  • 1 1/2 lbs Beef brisket or chuck, roast
  • 8 oz Beef flank steak
  • 2 lbs Beef knuckles
Produce
  • 1 cup Bean sprouts
  • 2 cups Cilantro, fresh
  • 1 Hand ginger, about 6 ounces, large
  • 4 Limes, medium
  • 3 Scallions
  • 2 Thai bird chiles
  • 2 Yellow onions, medium
Condiments
  • 1/4 cup Fish sauce
  • 1 Hoisin or sriracha sauce
Pasta & Grains
  • 2 lbs Rice noodles, dry small or medium
Baking & Spices
  • 2 tbsp Brown sugar, packed
  • 1 Cinnamon stick
  • 6 Cloves, whole
  • 1 tsp Coriander seeds, whole
  • 1 tsp Fennel seeds, whole
  • 5 Star anise pods
Oils & Vinegars
  • 2 tbsp Canola oil
