TWICE BAKED SWEET POTATOES WITH BALSAMIC ONIONS & GOAT CHEESE

The most delicious twice-baked savory candy potatoes filled with creamy goat cheese, sautéed balsamic onions, and rosemary. Vegetarian and gluten-free.

I love candy potatoes.

Of course, Travis doesn’t like them too much. Isn’t that the way it all the time works?

I’m constantly making an attempt to discover new methods to camouflage them into anything delicious that he'll consume with out making a face. Last week, I made butternut squash paninis with balsamic onions. Travis liked the balsamic onions within the sandwich. So, I thought, why no longer blend these similar balsamic onions into the candy potato filling with plenty of creamy goat cheese.

It worked! It worked! It worked!!

Travis mentioned they had been delicious, and he didn’t make a face whereas he ate them. That’s a win in my books!! Although, as he walked as much as the table, I saw him narrowing his eyes on the candy potatoes and he pointed to them and said…

“Um, what are those?”

I instructed him to strive it first earlier than he made a snap judgment. He did and I assume the balsamic onions actually did the trick for him!

WHAT SPICES ARE GOOD FOR SWEET POTATOES?
I typically do candy (cinnamon) or savory (Italian) when it involves candy potatoes. This savory model is D-E-L-I-C-I-O-U-S!

Classic candy potato taste + creamy goat cheese + tangy balsamic onions + Italian seasonings all crammed and baked appropriate into a tremendous savory little boat! I use garlic powder, parsley, and rosemary to kick up the flavor– it truly works so properly with candy potatoes!

Adding balsamic vinegar to the onions proper earlier than they’re executed cooking provides them such a distinctive taste that I haven’t had anyplace else. You get the caramelized onion taste with the wonder balsamic tang, that is going perfectly with the roasted candy potatoes.

WHAT TOPPINGS TO PUT ON A BAKED SWEET POTATO?
Even although those crammed candy potatoes have all of the meals combined within the filling, I at all times sprinkle just a bit crumbled goat cheese, parsley, and balsamic vinegar on ideal to make a quite presentation and to present what’s in them.

Every time I’ve made them for particular times or dinner parties, everybody has cherished them. I can genuinely see them being the preferrred addition to a Thanksgiving dinner!

CAN YOU EAT THE SKIN OF A SWEET POTATO?
We at all times consume the candy potato skins! They’re loaded with fiber and style nice too. Just make certain which you just scrub and wash the candy potatoes actually properly earlier than you bake them. Nobody needs to consume dirt.
