Cajun Roasted Cauliflower Salad

Instructions:
Preheat your oven to 200C (392F).
Line a baking tray with parchment paper and positioned the chopped cauliflower on it.
Mix the coconut oil with the maple syrup and pour over the cauliflower.* Mix to lightly coat.
Sprinkle with the cajun seasoning and dried thyme and blend back to coat everything.
Roast for 30 minutes tossing as soon as about midway through.
