Vegetarian #Empanadas

These wonderful vegetarian empanadas are made with gluten-free Fathead dough and a very flavorful filling. They are baked rather than fried, and they are surprisingly easy to make.

Ingredients
Vegetarian, Gluten free
∙ Makes 12
Produce
  • 1 tbsp Garlic
  • 1/2 lb Mushrooms
  • 1 Onion, (finely chopped (4 oz)), small
Refrigerated
  • 1 Egg, large
Baking & Spices
  • 3/4 cup Almond flour, finely ground
  • 2 tbsp Avocado oil
  • 1/4 tsp Black pepper
  • 1/2 tsp Paprika, smoked
  • 1/2 tsp Salt
Nuts & Seeds
  • 1/2 tsp Cumin, ground
Dairy
  • 1 oz Cream cheese
  • 1 1/2 cups Mozzarella cheese, part skim
